International Chef's Day - Who's cooking in MGIS?
Kuharice Aida, Anica, Ivka i Ana
You can probably imagine that cooking lunch every day, in this fast pace of life, is certainly not easy. But cooking lunch every day for several hundred people, when we think about it - is a real feat!
And not only that. There are also snacks for over 700 hungry students, which are distributed through two shifts on 5-6 occasions, menu design, food procurement, careful handling of ingredients, quality checks, serving, preparation of the kitchen...
You'd think - well, dozens of people have to do it for this wheel to keep spinning.
However, there are only five of heroines in the kitchen. Divided into two shifts.
Allow us to introduce them: chef Irma and her crew – Ana, Anica, Aida and Ivka.
Irma Pokos, Head Chef
We will try to list what their working day consists of.
The morning shift comes to work at 6 a.m., receives goods from the delivery person and disinfects the work surfaces. Of course, delivery notes and similar documents must also be filled out.
Preparation of food for snacks and lunch begins with:
Washing, cleaning and cutting fruits and vegetables, peeling potatoes, preparing meat, preparing dishes for cooking, and all tasks related to a dish that is already being cooked, cutting bread.
Cleaning tables in the dining room, preparing dishes for all students and preparing water and drinks. After a group of students has eaten, the tables are cleaned and prepared for the next one. And so several times, in two shifts.
In the end - washing and tidying dishes, disinfecting the space, and taking out packaging and waste. And in the end - preparation for the new day.
And if you think that school menus are simple, you are wrong. Especially in our school. Since our students come from different cultures and climates, our menus are adapted to different needs. Not only lot of effort is put into making the food healthy and nutritionally diverse, but different dietary customs and needs are also respected. Thus, our cooks make sure that there is always something good for vegans and vegetarians, that the food is prepared according to the halal standard, they make sure that the weekly menu follows the school events - for example, Healthy Breakfast Week, Turkish, Italian or Chinese Cuisine Week and similar.
Special attention is paid to the diet of students with food allergies, which are becoming more common. The cooks, along with the class teachers, know exactly how many students in each class are not allowed to eat certain foods and prepare special meals for them.
Our team, of course, has to design all these menus, every week in advance, but also be prepared for new circumstances - the lack of some food items or a larger volume of work.
Have you seen how many tasks there are? In one day, every day? And our girls - only 5 are always kind and smiling.
The best way to tell how they are doing is a satisfied smile and empty plates after the students have eaten, as well as a long line for "repetition". And the boss Irma says that this is her biggest motivation for work.
Dear Irma, Ana, Anica, Aida and Ivka, thank you for your daily efforts and delicious meals, we congratulate you on your day - October 20, International Chef's Day!
